Roti John and in the case known as, Sharon’s Roti John is a classic Singaporean street food that is also commonly enjoyed as a quick breakfast or snack sandwich that has an omelette and beef filling. If you’re wondering why this savoury version of a french toast is called Sharon’s Roti John, well it was made with the western influence of a baguette, therefore the name “Roti” and “John” referencing to the “western foreign” element.
Sharon loves hers meaty and slightly spicy, so without further a do, let’s get started!
Sharon’s Roti John

1 big red onion, finely chopped
Half a bulb of garlic, finely chopped
1 bay leaf
1 tbsp curry powder
1 tsp ground cumin
1 tbsp mushroom seasoning (optional)
1 tsp white pepper
500g minced beef
2 – 3 eggs

Directions
- Finely chop onion and garlic.
- In a frying pan with olive oil, fry chopped onion and garlic till fragrant.
- Once fragrant, add minced beef to cook.
- After 3-5 minutes, add curry powder, cumin, mushroom seasoning, white pepper and salt to taste.
- Mix it well and let it cook under low heat until all the juices from the beef are released.
- After about 5 minutes, add the bay leaf and let it cook for another 3 minutes.
- After 3 minutes, remove the cooked beef from the heat and transfer into a heat-proof bowl to cool down.
- In a separate bowl, whisk together 2 eggs until well combined.
- Add about 5 heaping tablespoons of cooked beef into the egg mixture and mix.
- Slice a ciabatta bread into half and then slice it open, horizontally.
- Dip the inner side of the bread into the beef and egg mixture – make sure to get all the beef and egg onto the bread.
- With a pan on low heat, drizzle some oil and pan fry the egg and beef side until golden brown.
- Once golden brown, remove from heat and place on a cooling rack.
- Serve immediately with a side of chilli sauce and enjoy!
